2 fresh white fish fillets (1-1 1/4 lbs)
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
lemon-slice in rounds
3 tbsp white wine
1/2 tsp paprika
2 grinds of pepper
generous pinch of salt
Coat the bottom of a casserole dish with 1 tbsp of extra virgin oil and place fish fillets in, skin side down. Set lemon slices on top, drizzle, pinch and grind the remaining ingredients on top of the fish and place in a 400° pre-heated oven for 18-22 minutes. The fish is done when it flakes easily with a fork. Feel free to toss some fresh chives (as seen below), thyme or dill on the fish before it goes in the oven.
Delicious served with rice, roasted carrots and onion.
