IMG_4805This creamy and tangy salad combines roasted beets, goat cheese and fresh arugula.  The flavor is delicious and the colors are so vibrant.

2 cups arugula per person-washed
1 roasted beet per person-sliced
1 ounce goat cheese per person
extra virgin olive oil (optional)
pinch of salt
grind of pepper

Cover a platter with arugula,  add roasted beets and crumble goat cheese on top.  Drizzle with oil (optional) and add salt and pepper.
