This can be served as a main course!

1 head cauliflower
1/4 cup olive oil
bunch of chives
8 oz cheddar cheese (mild, medium or sharp-your preference)

Mix below spices together in a bowl.

1/2 tsp smokey paprika (or smokey hot paprika-your choice)
1/2 tsp garlic powder
1/8 tsp pepper
1/2 tp salt

Cut cauliflower into 1/2 inch pieces, brush both sides with olive oil, sprinkle with spice mix and lay on rimmed cookie sheet.  Bake at 400° 20 minute each side until brownish.

Serve on a bed of purple cole slaw for a tasty and beautiful presentation.

Then remove from oven, smother with cheese (pop back in oven to melt) and chives (as pictured) or with sautéed mushrooms and onion.  Enjoy!

So few ingredients!

Remove and discard the base of the cauliflower.

Cit into 1/2″ pieces.

Oil and season with spice mix.

Smother with cheese when fully cooked to your preferred doneness.

Wash chives and cut into pieces. I give them an artful toss on the dish at the end…

You can use outer leaves of a cabbage for your presentation.
