You can’t eat just one…

Mix dry ingredients in a bowl-with whisk

3/4 cup cassava flour
1/4 cup coconut flour
1/2 tsp instant espresso
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp sea salt

Mix the below ingredients in a separate bowl-with mixer

1/2 cup organic coconut oil
1 tsp Earth Balance-soy free
1 egg
3/4 tsp vanilla
1/2 cup brown sugar-packed
1/3 cup sugar

1/2 cup semi or bitter sweet chocolate

Add the whisked dry ingredients to the mixed ingredients in the mixer and blend on medium until just mixed.   Fold in 1/2 cup chocolate chips, roll into small 1 1/2″ balls and place on a parchment covered cookie sheet.  Give each cookie ball a gentle 3 finger press as they don’t spread all that well on their own.

Bake in preheated 375° oven for 10 minutes.  Let them cool on the tray before removing them or they will break and crumble.  Makes 18-24 cookies depending on size.
