This omelette is colorful and delicious!
6 large eggs
3 tbsp unsweetened cashew milk (any milk works for this)
1/4 cup shredded cheese (optional)-I used a blend -Omit the cheese and it’s dairy free!
3 tbsp onion or shallot-chopped
1/2 cup cooked chorizo sausage- I buy my organic chorizo sausage in bulk with no casing. If you buy it in the form of sausage links, remove the casing.
1 small purple potato-boiled and chopped (I used a leftover potato from dinner last night)
1-2 tbsp cilantro-chopped
pinch of salt and pepper
Cook sausage in a skillet while your potato is boiling. Then preheat oven to 350° and spray a 6-8″ pie plate with non stick spray.
Put all ingredients (including cooked sausage and the boiled/chopped potato) in a bowl and whisk well. Pour into prepared pie plate and bake for 20-30 minutes. Enjoy!
