This salad (pictured below) is juicy, refreshing and pairs well with BBQ, soup or alone as a snack or light meal. Make this salad with your homegrown vegetables, serves 4 as a side.
1 cucumber-diced
2 tomatoes-diced
1 small onion-diced
1 glove garlic-minced or pressed
3-4 basil leaves-chopped
3 tbsp extra virgin olive oil
1.5 tbsp balsamic vinegar
salt & pepper to taste
4 oz. feta or blue cheese crumbles (optional)
Toss all of the above ingredients in a bowl and it’s ready to serve. Add homemade croutons for some crunch.
