Graham cracker! Inspired by a recipe I barely adapted from the cookbook, Two Moms in the Raw at http://www.twomomsintheraw.com. The crackers are perfect for s’mores, served with a creamy brie or alone with a cup of tea or coffee. Start to finish is only 20ish minutes.
2 cups of ground almond or hazelnut flour
2 tbsp extra virgin olive oil
1/4 cup coconut sugar
1/4 tsp instant espresso (optional)
1 tsp cinnamon
1 tsp vanilla
1 egg
1/4 tsp salt
Mix all above ingredients in a bowl until well blended. Place ball of cracker dough between 2 pieces of parchment on a flat surface and roll out to 1/8 inch. Lay this on sheet pan and remove the top piece of parchment. Using a sharp knife, cut into cracker squares or desired shapes if you’re feeling creative.
Bake in a preheated 350° oven for 10-15 minutes until slightly golden. Remove from the oven, place the baking sheet on a wire rack to cool. Once cooled, break up the crackers. Serve or store in an air tight container on the counter.
