This grass fed beef stew is delicious and takes only a few minutes to toss together.

2 lbs grass fed beef stew meat
6 Idaho potatoes-peeled and cut into quarters or numerous small potatoes- hole or cut in half
1 lb carrots-peeled and cut into large chunks
1 large onion-chopped
3/4 lb green beans
1/4 cup parsley chopped
1 bay leaf
2 garlic cloves-minced
1/4 tsp thyme-rounded
2 tbsp extra virgin olive oil
3/4 cup dry red wine
2 cups tomato juice
1 1/2 tsp salt
1/4 tsp pepper

Combine all above (raw) ingredients in your slow cooker.  Cover with lid and cook on high for 4.5-5 hours or on low for 10.5 hours.  Serve with a garden salad and some warm bread or rolls.
