Dressing-oli lemon

From simple greens with veggies to a protein rich salad jazzed up with slices of grilled chicken breast or copper river salmon (one of my favorite), this dressing will not rob your salad of its unique personality!  It is light and bright, hence the name.

While working with Aaron, our web designer, to bring Thyme and Style live, our dinner break included a salad with copper river salmon topped with Light Bright! dressing. When he requested the recipe it became my next post!

I have made this dressing as a single serving as well as for hundreds of people for events. It’s a breeze to whisk together.

1 cup extra virgin olive oil
1/3 cup fresh squeezed lemon juice-(juice of one small lemon)
2 garlic cloves-pressed
1/4 tsp salt
1/8 tsp pepper
Whisk the above ingredients together.

Feel free to add an additional garlic clove if you choose to have a more robust flavor.

Whisk.  Drizzle. Toss. Enjoy.
