This is such a fun dish to prepare!

What a fun creation and so easy to assemble.  This tower can be used as an hors d’oeuvre, dessert…or both!  It brings together sweet seasonal watermelon with savory mozzarella cheese and is topped off with fresh mint leaves, toasted walnuts and sprinklings of sea salt.

1 round seedless watermelon-cut into discs, rind removed
1 buffalo mozzarella ball-sliced into thin discs
bunch of mint leaves-washed, stems removed
1/4-1/3 cup toasted walnuts
sea salt
olive oil for drizzling is optional

Assemble in layers, make it as tall as you want and enjoy!

Feeds 8-12 people

Slice the melon and cut out the center. The rinds look like mini hula hoops!

Dry toast the walnuts.

Slice fresh mozzarella into discs.

Collect your mint from your herb garden or your local grocer and wash it.

    This recipe makes me long for warmer days. What is the best way to serve it to your guests? I would cry if it fell apart.

      Great question Sharon. I would suggest using a serrated edge knife to cut it as you would a layer cake. The slice can be served standing up or laying on it’s side depending on how tall you make your creation. May your tower stand tall!
