So thankful to Marcy Miller, cofounder of Organic Sandwich Company in Boulder, Colorado for this recipe. This cheese spread pairs well with fresh vegetables, bread, crackers and fruit.
4 cups raw almonds (soaked overnight in water and rinsed)
1 1/2 cups water
1 cup lemon juice
1/2 cup + 2 tbsp olive oil
4 garlic cloves
1 tbsp + 2 teaspoons salt
Blend all above ingredients in a food processor for 4-7 minutes until desired texture is reached. Four minutes will have a bit of texture and seven minutes will be smooth.
