French Fries

Love, love, love these fries as they are a healthier version of your traditional deep fried spuds.  So satisfying and they pair well with burgers, ribs and the like.  Idaho or Russet offer the best results, this recipe serves 2-3.

2 potatoes
1 clove garlic-minced or pressed
1 tbsp olive oil
1/8 tsp salt
dash of pepper
1-2 sprigs of your favorite herb or 1/2 tsp of a dried herb of choice (optional)

Peel the potatoes, cut in half long ways and then cut each half into 3 to 4 wedges.

Toss potato wedges in a bowl with remaining ingredients and distribute on a parchment or foil covered sheet pan.

Bake in a preheated oven at 400° for 30-45 minutes until golden brown, tossing once mid-way through.  Remove from oven and…keep your eyes on your fries or they will disappear!
