Tented scallops.

Scallops are delicious with rice and a vegetable or on a mound of risotto.  This simple five ingredient recipe is so satisfying.

If purchasing wet scallops you will need to soak them in cold water with the juice of one lemon and a few teaspoons of salt for 30 minutes before you follow the recipe below.  The soaking will help to remove the solution that the wet scallop are processed in.

1/2 pound dry scallops-remove tendon and bring to room temperature
2 tbsp butter (or oil)
salt/pepper
lemon for serving (optional)

Wash and towel dry scallops, sprinkle with salt and pepper.

Melt butter in a non stick pan on medium high heat.  When butter is hot add scallops and cook 2 minutes on each side until a golden brown color is achieved.

Plate the scallopst and tent with foil until ready to serve.
