It’s that time of year! Fresh spring peas are at the farmers market. A delight to eat and so easy to prepare. A simple pleasure one can enjoy while they are in season.
1 lb. peas
1 tbsp butter
Salt & pepper to taste
Fresh mint-snip over buttered peas
Serves 3-4
Rinse peas and put in saucepan cover with 4-6 inches of cold water and bring to a rolling boil for 5-8 minutes depending on the crunch you want to experience. Remove from heat, drain in colander, place in bowl and add remaining ingredients.
The peas add a lovely pop of color on a plate when served along side a piece of chicken, fish, steak or piled high over a mound of rice. Above is a bowl of homemade Chicken Vegetable Soup with fresh spring peas toppled about.
