Pumpkin spice cafe latte made with coffee.

This is a delicious way to enjoy a seasonal treat in a more healthy way.  Fabulous made with tea or coffee.  Enjoy with a crunchy biscotti. Makes 2 lattes, recipe can be doubled!

1 1/2 cups strong brewed tea or coffee
2 tbsp half and half
1 1/2 tsp raw honey
1 tsp chia seeds
1/2 cup raw cashews (soaked)
1/8 tsp ginger
1/8 tsp nutmeg
1/2 tsp cinnamon
1 tsp organic pumpkin (I buy organic pumpkin puree in a can)
dash of salt

Mix all above ingredients in a blender for one minute.  Taste and make any adjustments  to better serve your palate.  Do you need more honey? Spices?

My Vitamix at full throttle for 1 minute heats this to a comfortable serving temperature.  If you are using a blender, after blending, pour the frothy liquid into a pan and warm to desired temperature (do not boil).  Serve in mugs and sprinkle with cinnamon or toss in a cinnamon stick.
