2 cups quinoa (cooked)
1 small onion-dice
1 small tomato-dice
1/2 english cucumber-dice
1 garlic clove-pressed or minced
2-3 tbsp mint leaves-finally shredded (chiffonade)
1 1/2 tbsp balsamic vinegar
2 1/2 tbsp extra virgin olive oil
1/8 tsp pepper
1/4 tsp salt
In a large bowl, toss all of the above ingredients together. Taste to see if you need to adjust seasonings and serve or store in the icebox.
To mold (as seen in photo above) use a small dish or bowl of any sort and garnish with fresh mint.
