IMG_1836Get warm and cozy with this hearty stew that satisfies when the weather outside is in the single digits.  The curry powder plays a unique role in this dish, ushering in a lovely warmth that will surprise your senses.  Feel free to serve with crusty bread or rolls.

Quinoa Recipe
1 cup quinoa
2 tbsp extra virgin olive oil
2 cups vegetable broth or water
1/3 cup rasins
pinch of salt
pinch of pepper

Pour broth or water, oil, salt, pepper and quinoa into a medium saucepan. Bring the ingredients to a boil on high heat. Once it reaches a boil reduce the heat to low and simmer for 20 minutes until liquid is absorbed.  Remove from the heat, add raisins and adjust salt and pepper to taste.  Set aside.

Stew Recipe
1 cup onion-diced
1 cup carrots-diced
1/2 cup celery-diced
2 garlic cloves-minced
1 bunch kale-chop after ribs are removed
1/4 cup cilantro-chopped
1-15 oz can chick peas-rinsed and drained
5 cups vegetable broth
1-15 oz can of diced tomatoes-juice goes in recipe too!
3 tbsp olive oil
2-3 tsp curry powder
pinch of cayenne pepper
1/2 tsp salt
1/8 tsp pepper
lemon wedges-for garnish

In a dutch oven over medium heat, sauté onion, carrots and celery for 3-4 minutes until soft.  Add garlic and spices and stir constantly for 30 seconds.  Add kale, chick peas, broth and tomatoes with their juice.  Bring to a boil and then reduce to a simmer for 20-30 minutes until kale is soft.  Spoon into individual bowls and top with rain studded quinoa.  Serve with lemon wedges for spritzing.  This stew freezes well.
