A delicious colorful salad is a great way to maintain energy throughout the day. I often have roasted beets in the refrigerator and they end up in many of my salads.
This earthy and sweet roasted beet salad is satisfying and can be serves as a meatless main course. Serves 6-8
1 head lettuce-romain or other
4 roasted beets
1 carrot-diced
1/2 cucumber-peeled, seeds removed and dices
6 cherry tomatos-sliced in half
10 olives-black or green
1 bunch chives-washed
6 oz. blue cheese, feta or goat cheese-crumbled (optional)
