Roast a head of garlic.

The creative possibilities with roasted garlic are endless!

When garlic is roasted it loses its pungent, strong flavor and transforms into a smooth, creamy, delightful spread.  Toss some in your sautéed or steamed veggies or into mashed potatoes before whipping them.

For a dinner party you can serve roasted bulbs that are individually plated and garnished with chives or basil as an appetizer accompanied by bread or toast points.

Instructions below.

Cut the top 1/4 of the bulb off to expose the cloves , place on a piece of foil, drizzle with extra virgin olive oil, wrap it making sure there are no holes in the bottom of the foil and that seams are tight and pop the foil packet in the oven.

Roast at 400 degrees for 30-40 minutes.  Let cool and begin creating.

Cut off top 1/4 of garlic head and drizzle with olive oil.

Seal the foil pouch well.

Bake and let cool before opening the foil.

Serving suggestion: Serve each person a head of garlic garnished with herbs alongside toast points.
