The earthiness of the beets paired with sweet carrots and mild leeks makes quite the tasty trio. While working from home, I decided to roast the few veggies in the crisper and…ate the whole tray for lunch!
3 carrots-peeled and quartered
1 beet-peeled and cut into thin wedges
1 leek-white and light green parts only-rinsed and quartered
1 tbsp extra virgin olive oil
salt and pepper to taste
1-2 tbsp sheep feta-sprinkled about (optional-omit and this dish is dairy free)
In a large mixing bowl toss prepared vegetables in oil, salt and pepper. Roast on a parchment covered sheet pan in a preheated 400° oven for 20-30 minutes. Remove from the oven and sprinkle with cheese if you would like.
