A good friend in California prepared this salsa for her family while I was visiting. I named my version of the recipe after her daughter, Elianna, who was my helper while planting herbs in their garden!
This combination creates a flavorful and expressive salsa. The secret is the cumin which adds a hint of suprise for the taste buds. What’s right on is the consistency. Not to chunky and not too soupy.
1 small onion-cut in half -skin and ends removed
1 garlic clove-skin off
1/3 of a full size carrot (or 1/2 tsp sugar)
1/4 cup cilantro (not packed)
1/4-1/2 small jalapeño pepper -veins and seeds removed (use more if you like it spicy)
1 generous squeeze fresh lime juice (lemon works in a pinch)
1/8 tsp cumin
1/4 kosher salt (optional)
1-15 oz can organic diced tomatoes-drained
In a food processor, add all of the above prepped ingredients except the tomatoes. Pulse to desired chunkiness. Finally, add the drained tomatoes and pulse a few times until all is blended well. Transfer to serving bowl and set a bowl of organic tortilla chips along side and watch it disappear…disfruta!
