After an intense workout I raced home hungry to create this beautiful to look at dish that satisfied my hunger pangs.

1 can organic black beans-drained and rinsed
1 batch homemade salsa click here for recipe (or store bought)
1 tbsp extra virgin olive oil
1 garlic clove-leave whole
4 eggs
1/3 cup fresh cilantro-chopped
3 scallions-sliced on the bias
4 oz. cheese (one ounce per egg)-cheese is optional!
1/4 tsp salt
1-2 grinds pepper
1 cup baby spinach
1 avocado
1 lime

Heat a large skillet to medium heat and add oil, beans and garlic clove.  Stir until warmed through then add salsa and combine.  Make wells in the mixture and crack the eggs into the wells. Season with salt and pepper and cover for 5 minutes.  Check and continue cooking until eggs reach desired doneness (3-5 minutes).  Remove pan from burner,  sprinkle with cheese and cover until cheese melts. Plate with baby spinach, toss scallions and onions about and garnish with lime wedges and avocado slices.  Enjoy.
