Stuffed chicken breast is quite easy to assemble and with a quick cook time it will look like you spent hours in the kitchen!

chicken breast (one per person)-pounded thin
1 to 1 1/2 oz. cheddar cheese- per person
2-3 florets broccoli-steamed- per person
1 1/2 tsp olive muffalata- per person
salt and pepper
2 small kabob sticks per rolled breast

Salt and pepper the raw chicken breast, sear in a non stick pan on both sides in olive oil and remove from heat.

Lay chicken breast on prep board, stack ingredients on one end and roll, using small kabob sticks, secure each roll.

Place in oiled baking dish and sprinkle with paprika, salt and pepper.  Place in oven for 35-50 minutes until thermometer reads 165°.

Serve on a bed of spinach greens (or lettuce of choice) with onions that have been tossed in extra virgin olive oil, balsamic vinegar, salt and pepper.

 

Other stuffing options:

  • Bacon (or turkey bacon), mozzarella, basil
  • Pepperoni, mozzarella and pizza sauce
  • Sautéed asparagus, cheddar and basil
  • Get creative with your favorite cheese, veggies and herbs
