Love this simple and delicious recipe. From what I understand, authentic Italian sausage with peppers and onions does not have a sauce, so feel free to omit the Sunday Gravy.
5-6 links of Italian sausage (you can use pork, chicken, turkey, etc.)
2 bell peppers-clean and sliced in strips
1 large onion-clean and slice in half rings
1/4 cup dry red wine
2-3 tbsp extra virgin olive oil
splash of Sunday Gravy.
1/8 tsp pepper
1/2 tsp salt
In a cast iron skillet, sauté the sausage in 1 tbsp of olive oil until brown on all sides but not fully cooked and remove from skillet to a plate.
In the same skillet add 1 tbsp of the olive oil and the peppers, onions, salt and pepper and sauté 4ish minutes until soft. Add the wine and continue to sauté until wine is reduced a bit.
Layer any oven safe dish with peppers and onions then top with the browned sausage and Sunday Gravy if using.
Bake in a preheated oven at 375° for 35-45 minutes.
