Made an omelet this morning using some of the 2.5 pound hen-of-the-woods mushroom that my hair stylist and his wife shared with us. This is simple to throw together and pop in the oven.  Enjoy!

6 large eggs
2 tbsp unsweetened nut milk (or cows milk)
1/4 cup shredded swiss cheese (optional)-Omit the cheese and it’s dairy free!
1 shallot-chopped & sautéed with the mushrooms
1/3 cup sautéed hen-of-the-woods mushrooms-chopped (you can use your favorite mushroom variety)
1 slice cooked bacon-chopped
2 sautéed asparagus-chopped
pinch of salt and pepper

Whisk all of the above together in a bowl and pour into a greased 8″ or 9″ pie plate.  Bake at 350° in a pre-heated oven for 20-30 minutes.

Garnish with chives and enjoy.
