I love playing with flavors and textures when cooking. Pictured above is roasted cauliflower, onions and garlic. Capers and pine nuts were tossed on for added flavor and texture in the last ten minutes of roasting.
1 head cauliflower-washed & cut into florets
1 onion peeled & chopped
2 cloves garlic-minced
1-2 tbsp olive oil
dash of pepper
generous pinch or two of salt
In the last 10 minutes of roasting add
1 handful of pine nuts
1 1/2-2 tbsp capers-rinsed
Mix all above ingredients (less the capers and pine nuts) in a bowl and toss to coat. Spill ingredients on a parchment covered sheet pan and roast in a preheated oven for 20 minutes. Remove the sheet pan from oven after 20 minutes and add pine nuts and capers. Return to oven for 10 more minutes. Stir, adjust seasonings and serve or refrigerate after cooled.
