Coffee Break!

Not too sweet and oh so satisfying!

Mix in a bowl-with whisk

3/4 cup cassava flour
1/4 cup coconut flour
1/2 tsp instant espresso
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp sea salt

Mix in a separate bowl-with mixer

1 stick butter-room temp
1 egg
3/4 tsp vanilla
1/2 cup brown sugar-packed
1/3 cup sugar

 

Next pour the flour mixture in with the butter mixture and combine.  Fold in 1/2 cup bitter sweet chocolate chips and 1/4 cup semi sweet chocolate chips.  Roll into small 1 1/2″ balls and place on a parchment covered cookie sheet.  Give each cookie ball a gentle 3 finger press as they don’t spread all that well on their own.

Bake in preheated 375° oven for 10 minutes.  Let them cool on the tray before removing them or they will break and crumble.  Makes 18-24 cookies depending on size.
