This dish is the perfect accompaniment to ribs, burgers and brats.  It offers a refreshing side without the heaviness of a mayonnaise based slaw.

Cabbage salad is versatile and can be used in a variety of ways.  Use as a topping on fish tacos, along side a piece of grilled fish or with a tuna fish or grilled cheese sandwich.

Mix the below ingredients in one large bowl, stir well and refrigerate.  Can be served within 30 minutes or the next day!

1 lb green or purple cabbage or a mix of the two, shredded (7-8 cups)
1 carrot-shredded or thin coins
1/2 onion chopped or shredded OR 3 tbsp chives
a few radishes (optional)
1 garlic clove-pressed or minced
2 tbsp parsley or cilantro
1/8 cup extra virgin olive oil
1/4 cup canola oil
1/8 cup white wine vinegar
1/4 tsp celery salt
1/4 tsp sugar
1/4 tsp salt
1/8-1/4 tsp pepper

Feeds 6-8

Shortcut Tip:
Some markets sell the cabbage shredded and may have a mix with the carrot already in it, usually labeled as cole slaw mix.

Also, shredded broccoli slaw mix works perfectly with this dressing.

    As a time saver, I usually buy the shredded slaw mix.
